I love these smoky tofu sandwiches because they’re super easy to make and are excellent to pack with you to work. They will keep you full for a good while and they’re delicious!
I usually leave my tofu in a simple marinade the night before, but if you’re in a hurry then there is a way around it too (see recipe notes).
Smoky Tofu Sandwich
- 4 slices marinated tofu
- 4 slices toasted whole wheat bread
- vegan spread or mayo
- bell pepper
- Cook both sides of the tofu on medium to high heat until golden brown.
- Use whatever mayo or vegan spread on your toast. Add some peppers, cucumber or tomatoes between your sandwich.
If you don’t have marinated tofu, then just sprinkle some powdered paprika, garlic powder and salt on the tofu while cooking. It will add a lot of taste, but I recommend marinating your tofu the day before.
